- 2 cups pecans, toasted and chopped
- 1/2 cup almond meal/flour
- 1 cup rolled oats
- 1/2 tsp salt
- 1/4 cup almond butter
- 1/2 cup coconut oil
- 1/4 cup maple syrup
- 2 tsp vanilla
In a large bowl, combine chopped pecans, almond meal, rolled oats and salt. In a small pan melt the coconut oil and almond butter together. Remove the coconut oil and almond butter mixture from the stove. Add maple syrup and vanilla and stir until combined. Add the liquids to the dry ingredients and stir until everything is well coated. In a 9x9 pan lined with parchment paper, press the mixture into the pan. Place in the freezer and chill for 15-30 minutes (you could sneak them out in 15 if your freezer is really cold). Cut into 15 squares and wrap individually in plastic wrap. Store in the freezer.
Time saving tips: Use a food processor to chop the pecans. Skip toasting them if you're in a big rush. Toasting them in a frying pan is faster than using the oven. To toast in the oven, heat to 325 F, place on a tray and bake for 15 minutes, stirring in between.
Money saving tips: Use peanut butter and peanuts or almonds instead of pecans. Also, you can substitute honey for maple syrup. Make your own almond meal or flour by putting about 1 cup of almonds into a food processor. Pulse until nice and fine. Measure the almond meal before starting to ensure you have a proper 1/2 cup.
