RECIPE

Kale is a superfood!
High in beta carotene
source of two carotenoids, lutein and zeaxanthin
potent anti-cancer properties
MASSAGED KALE SALAD
1 big bunch of Kale or 2 small bunches
1/2 cup Lemon Tahini dressing
1/2 cup thinly sliced Red Cabbage
1/2 cup thinly sliced Red Onion
1/2 cup peeled, shredded Carrot
2 Tbsp Toasted Sesame (optional Sunflower, Pumpkin seeds)
Wash, dry and chop kale. Prepare cabbage, onion, carrot.
Transfer all vegetables into a large mixing bowl. Prepare Lemon Tahini
recipe. Pour 1/2 cup Lemon Tahini dressing over salad and massage with your hands, working the dressing into the vegetables. Top with toasted seeds and enjoy.
LEMON TAHINI DRESSING
1/2 cup Olive Oil
1/2 cup Lemon Juice
1/2 cup Apple Cider Vinegar
1/3 cup Tahini
1/3 cup Agave/Honey or Maple Syrup
1-2 cloves Garlic
pinch of cayenne
1 tsp salt
Place all ingredients in blender and pulse until well combined. Store in an airtight container, will keep for up to a week in the refrigerator.
