Gardeners throughout the Northern Hemisphere are putting their beds to rest for the winter - and some of us are tending young crops that will yield a harvest all winter long.
In Asheville the average first fall frost date is October 11 - just a few weeks away, but Ashevillage Sanctuary's gardens are full of leafy greens, root vegetables, and cover crops that will help nourish the soil for spring planting. Site & Garden Manager, Kate Hanford, with the help of interns and volunteers, has been busy mulching and constructing high tunnels to help protect fall and winter crops from the dropping temperatures. [Recipe] TRUFFLED POLENTA WITH ROASTED ROOT VEGGIE CROUTONS: Fall Harvest In A Bowl #yum
Are you looking for a delicious way to prepare all those root veggies and corn that are in season right now? Quinn Asteak, Traditional Food Preparation, Fermentation & Preservation track leader for our Resilient Living Programs, shares this delicious and nutritious recipe that will give you deep grounding and nourishment.
Servings: 4 Time: 45 minutes What you need: roasting tray, large pot with lid, whisk, medium pot with lid, steamer basket, small food processor OR bowl and potato masher
Ingredients:
- 1 cup organic polenta (corn grits)
- 4 cups organic vegetable broth
- 1 tablespoon organic grass fed butter
- 1 teaspoon truffle salt (for the polenta)
- sea salt and pepper, to taste (for the roasted vegetables)
- 1 tablespoon extra virgin olive oil
- 2 cups butternut squash, finely diced
- 6 carrots, thinly sliced
- a handful of flat leaf parsley, chopped
